Breakfast: Oatmeal & Banana Pancakes

Let’s be real-dieting and eating clean gets frustrating and takes a toll on our mental. We work so hard daily at the gym and eating healthy that we don’t always want to go all out and ruin the progress we’ve made, setting ourselves a few steps back. Sometimes we want the treat minus the calories and sugar. I’ve researched and tested some healthy recipes and added my own twist to make them even more guilt-free! Didn’t know indulging and staying lean was possible? Let me show you how to have your cake and eat it too-literally.



Oatmeal & Banana Protein Pancakes

Dry Ingredients:

½ cup rolled oats

1 scoop lean protein powder (optional)

1 teaspoon cinnamon

1 teaspoon baking powder

1 teaspoon flax seeds (optional)

Stevia (to taste)


In a separate bowl:

Wet Ingredients:

½ banana (crush)

1 whole egg (whisk into crushed banana)

1 teaspoon vanilla essence


Instructions:

In a blender or food processor, blend rolled oats until flour consistency. Add the remaining dry ingredients into the blender.

Feel free to also blend together wet ingredients into blender-I do this separately.

In a separate bowl, crush banana until smooth with no lumps. Whisk the egg into the crushed banana followed by adding in the vanilla essence into mixture.

Combine dry and wet ingredients.

Slowly pour almond milk or water into ingredients while stirring until you have reach your desired consistency for your pancake mix.

Spray no-calorie cooking spray onto your non-stick pan and add mixture as you would making regular pancakes. Flip and enjoy.

I have them with scrambled egg whites and turkey bacon/ground turkey on the side.
