Sweet Tooth Breakfast: Sweet Potato Brownies



Sweet Potato Brownies

Ingredients

500gram sweet potato (steam or boil)

100 grams rolled oats

100grams ground almonds

6 tablespoons cocoa powder

2 tablespoons coconut oil / extra virgin olive oil

6 tablespoons maple syrup (more or less to taste)

12 dates


Instructions

Preheat Oven 180 degrees C

In a food processor or blender, grind together the softened sweet potatoes and dates.

Add all of the remaining ingredients into food processor. Ensure consistency is very smooth with no lumps.

In the baking tray spread wax paper or coconut/olive oil evenly. Smooth the brownie batter into the tray and place in oven.


Icing

2 tablespoons cacao powder

2 tablespoons coconut oil

2 tablespoons almond butter

1 tablespoon maple syrup


Instructions

While the brownie is cooling

Melt all ingredients together and place in refrigerator for a few minutes until it solidifies a little so mixture won’t be too runny.

Take brownie out of the tray then pour icing mixture onto the brownie, smoothening it evenly.

Let this sit for some time until the icing completely sets. Cut into desired squares and serve.

Blend sweet potato and dates

Add other mixed ingredients

Add pinch of salt

Blend all

Grease baking tray

Evenly distribute mixture in tray
